Great vegetarian recipes for comfort food


If you haven’t been a vegetarian that long, or you’re just looking for new ideas, comfort food is a great thing to learn how to make. Whether it’s cold and miserable outside or you just had a bad day, it’s a good idea to keep some great vegetarian recipes around for your favorite comfort food.

One thing you can make when you’re looking for great vegetarian recipes is homemade tomato soup with a grilled cheese sandwich, just like you ate when you were a kid. To make homemade tomato soup, sauté some chopped shallots in a little bit of butter in a Dutch oven. Then, add a bunch of chopped tomatoes, salt, and water or vegetable broth, cover and cook, stirring occasionally, for a few hours. Then, strain the soup into a large bowl to get rid of all of the tomato seeds. If you prefer a creamier soup, you can also whisk in some milk, and then return the soup to the stove to heat through. Season the soup with salt and pepper to taste, and serve with a grilled cheese sandwich with American cheese, sliced on the diagonal, of course.

Another option for great comfort food is to make up a batch of potato leek soup. In a stock pot, sauté some washed and sliced leeks until limp. Then, add diced potatoes and vegetable stock or vegetable broth, bring to a boil, cover, and then simmer until the potatoes are completely soft. If the liquid disappears, you can add a bit more water or vegetable broth. Then, stir in some milk, salt, and pepper, and simmer until hot all the way through. You can serve it as a hearty, chunky soup, or, if you prefer, you can blend it with an immersion blender until smooth. Garnish with parsley and freshly ground pepper and you have a bowl of soup you can curl up on the couch with.


While pizza is often made fun of for being a vegetarian’s go-to dish, pizza makes for a variety of great vegetarian recipes for comfort food. You can either buy a pre-made pizza crust or a pre-made pizza dough that you can roll out on a pizza pan. Either way, after you have unwrapped your pizza crust or rolled out your pizza dough, top with tomato sauce, sprinkle with oregano, basil, salt, and pepper, and then add whatever kind of shredded cheese you like. Typically, shredded mozzarella is the most popular, but you can also use chunks of buffalo mozzarella, shredded cheddar cheese, or grated parmesan. In terms of toppings, use whatever toppings you adore to make the best comfort pizza you can think of. Some ideas are mushrooms, bell peppers, onions, corn, pineapple, tomato slices, extra garlic, fresh spinach sautéed in garlic, and sliced olives. You can even roast some squash, zucchini, carrots, and potatoes to spread over the top of your pizza. The great thing about pizza is that you can put any ingredient you want on it. If you really like cheese, add more cheese over the toppings. Then, stick in the oven and bake until the dough is brown and crisp and the cheese is melted.
