Quick Vegetarian Recipes that are Great for a Last Minute Picnic


If it’s the middle of the summer and you decide to go on a picnic, the last thing you want to do is slave away in the kitchen making hot dish after hot dish. Instead, it’s better to pack a variety of lighter, fresher foods that are easy to eat outside. These are great quick vegetarian recipes for picnics or any last-minute summer event.

One thing you can serve is vegetable crudités paired with tzatziki, which is a Greek yogurt and cucumber dip. For the crudités, cut up a variety of raw vegetables, including carrots, celery, broccoli, cauliflower, and cherry or grape tomatoes. For the tzatziki, peel a cucumber, cut it in half lengthwise, and carefully scrape out all of the seeds with a spoon. Dice the cucumber, sprinkle with salt, and set aside for a few minutes. Then, add some fresh minced garlic, mint, dill, and plain yogurt to the diced cucumber. Add some lemon juice and olive oil, mix together until well blended, and you have a refreshing dip to pair with crudités and fresh pita bread.

If you’re looking for additional quick vegetarian recipes, you should try making deviled eggs. While they appear complicated to prepare, they’re actually quite easy. Hard boil some eggs, and then place the eggs in cold water. Carefully peel the hardboiled eggs, then cut in half lengthwise. Carefully take the egg yolks out of the hardboiled eggs and place them in a bowl. Mash the yolks, and then stir in some mayonnaise, soy sauce, mustard, minced red onion, and salt. Spoon this mixture back into the eggs. Sprinkle with paprika and serve cold.

Salads are also quick vegetarian recipes that are ideal for picnics. One option is to make an easy sun-dried tomato salad. All you need to do is dice some fresh mozzarella and fresh tomatoes into even squares. Then, cut some sun-dried tomatoes into smaller squares. Mix the cheese with the tomatoes, drizzle with olive oil, sprinkle with sea salt and fresh ground pepper, and serve right away.

Look for either fresh or frozen tortellini that is filled with cheese, mushrooms, spinach, or any other filling you want. Make sure to check the ingredients to see if there is any chicken broth used in the pasta. Cook the pasta following the directions on the package. Rinse with cold water and blot dry with a paper towel. Mix together some mayonnaise, cooked peas, and walnut pieces, toss with the tortellini, and serve. Keep in mind that if the pasta or peas are too hot, the mayonnaise will cook, and this dish will not turn out as a salad.

Another great option for quick vegetarian recipes is to let everyone build their own vegetable sandwich. Use whatever combinations of bread or pita, vegetables, fillings, cheese, and slices of hardboiled eggs that you want. Some great choices are sliced avocado, cucumber, bean sprouts, spinach, and onion, Swiss or goat cheese, and pesto, eggplant dip, or hummus. However, don’t be afraid to combine any vegetables and other ingredients that you want to create an individual sandwich that you love.
